The GOLD retarder prover cabinets offer high performance and precise control of the leavening process. Built in AISI 304 stainless steel with 80 mm insulation, they feature a monoblock motor, a 7” touch display integrated into the door, Wi-Fi connectivity, an air distribution duct, and an internal LED light bar for optimal visibility. The diamond-shaped bottom with drain hole ensures easy cleaning and maximum hygiene. Available in 700 L models with stamped runners and 900 L models.

6-STEP PRODUCT CYCLE MANAGEMENT:

  1. BLAST CHILLING:
    Preparation of the product for the storage phase by rapidly lowering the temperature below 0°C, thus inhibiting yeast activity.
  2. STORAGE:
    Maintaining the product at approximately 3°C.
  3. PROOFING 1*:
    Product reactivation and first progressive proving phase up to the set temperature.
  4. PROOFING 2*:
    Second progressive proving phase up to the set temperature.
  5. PROOFING 3*:
    Third progressive proving phase up to the set temperature.
  6. HOLDING:
    Slight reduction of the temperature to stabilize the achieved proving level according to the baking schedule.

* Temperature modulation is managed through proportional-integral control.

ULTRASONIC HUMIDIFIER

All Dalmec retarder proofer cabinets are equipped with an ultrasonic humidifier used to generate a fine, cool mist, maintaining a uniform and stable environment and preventing surface dehydration.

A sensor is also installed for automatic humidity detection and regulation, ensuring constant and precise control of the internal microclimate.
